The Cheesecake most similar to the one we know today came from American confectioneries, run by Jewish descendants. The modern version of the recipe appeared around 1880, when the Empire Cheese Company launched the first industrialized cream cheese.
Ingredients for dough:
- 1 package processed cornstarch cookie
- 1/4 cup brown sugar
- 1/2 cup margarine (90g)
For the filling
- 3 eggs
- 150 g sugar
- 2 packages cream cheese (300g)
- Juice of 1/2 lemon
- 1/2 teaspoon vanilla essence
For the topping
- 300 g guava paste, diced
- 1/2 cup white wine
- Juice of 1/2 lemon
1 - Combine the cookies and the brown sugar and mix with the margarine until it forms a homogeneous dough.
2 - With this dough, line a 23-cm diameter baking pan with removable bottom, pressing with a spoon to make the surface smooth, and refrigerate.
3 - Lightly beat the eggs in the mixer and add the remaining ingredients.
4 - Beat for 20 minutes at low speed.
5 - Spread the filling in the mould.
6 - Preheat oven to 180°C and bake for 40 minutes or until the surface is golden brown.
7 - Heat the guava, the wine, the lemon juice and 1/2 cup water, cooking on low heat until all lumps are dissolved and the syrup is thick.
8 - Let it cool and pour it over the pie.
9 - Garnish the center with slices of guava and mint leaves.
10 - Serve cold.
